It's in the source code view because if you've asked for the source code that's what you get, the source as it was on the original site. The source is sent from the Opera Mini server when you request it, it's not sent with the page.
If you want to see exactly what's sent to your phone you can save a page from within Mini then have a look at the file that's saved (it's a binary file). There's a bit more information about how Opera Mini works here: http://dev.opera.com/articles/view/opera-binary-markup-language/
